I’d definitely at least get a set to at least hold and let the value go up. There has yet to have been a HasLab release of anything whose value was less than what it was when it was first offered up.

That's not exactly what he said. He said he was originally being designed with military robots and Diaclone in mind, but then was altered to be more like a super robot. But really, when you compare the two designs the only difference is they removed a few weapons from his arms and smoothed out some of the details, the overall shape is still there so people aren't entirely wrong to say he resembles a Gundam, because he definitely still does, even more so than the original design.

Gundam is part of a whole anime sub genre called "Real Robots" which includes franchises such as Macross, Votoms etc..

"Super Robots" are a different sub genre altogether that goes all the way back to the first Tetsujin 28 (Gigantor) and are Robots, usually piloted, with Super Powers and are considered to be super heroes in their own right. This is where Mazinger Z, Getter Robo and even Go Lion (Voltron) come from. at 1:51 in the video "Super Robot" is in caps and quotes, so he is very specifically referring to this subgenre of anime, not as a generic term.

The design started out more militaristic, then became more more superhero like stated at 2:31, thus making SS look even less like a "realistic" Robot or Gundam by comparison.
I can definitely see the Super hero/ Super Robot aspect of Star Saber.
But then again. Some other people mistake Transformers and Gundam so I guess it's ok.
